Award winning chef, Liam Dillon, known for his work at The Boat Inn in Lichfield, also brings his culinary expertise to The Two Pigs, a modern neighbourhood pub in Barton under Needwood, East Staffordshire.
Nestled in the heart of the urban landscape by the Staffordshire canal side, The Boat is a unique restaurant and micro-farm led by chef Liam Dillon. With a focus on seasonal and sustainable living, The Boat offers casual fine dining with a modern take on British cuisine. Inspired by local surroundings, Liam Dillon and his team craft menus that evolve with nature, while prioritizing sustainability and innovation for the future. The space serves not only as a dining destination but also as a creative hub where the land itself drives culinary inspiration and refinement.
Since 2017, The Boat has been his pride and passion, evolving alongside the creative vision of chef-owner Liam Dillon.
Liam’s career is rich with experience, having trained in some of the UK’s finest kitchens. His journey began in London with Marcus Wareing at The Berkeley, and progressed through top-tier establishments like Five Fields (1*) in Chelsea and Story (2*) by Tom Sellers in Bermondsey. Liam’s culinary exploration extended internationally, with key roles at renowned restaurants such as Quay in Sydney, Noma in Copenhagen, and New York’s Eleven Madison Park (3*) and Gilt (2*). After honing his craft across the globe, Liam returned to his hometown of Lichfield, ready to build something of his own.
In the early days, The Boat may have looked like a modest roadside pub, but with tireless dedication and continual renovations, it has transformed into a space where Liam can share his refined take on modern British cuisine. The restaurant is now a reflection of his passion, innovation, and commitment to culinary excellence.
At The Two Pigs, Dillon offers a more casual dining experience than his fine-dining restaurant in Lichfield. The pub focuses on reimagined British classics with a modern twist, perfect for a relaxing meal in a cosy setting. The menu includes weekend breakfasts, Sunday lunches, and a variety of pub favourites with Dillon’s creative flair. The pub also has space for private events and a beautiful outdoor garden for warmer days.
